Roasted Parsnip Soup 🥣

Creamy, smooth, and full of root veggie flavor. Soups are always better if you take the time to roast the veggies, so this recipe calls for roasting the parsnips, carrot, leek, and garlic before puréing. It’s a quick, easy step that deepens the flavor and brings out the natural sweetness of the veggies, especially the carrot.

If you happen to have bread on hand, some homemade croutons make a great addition!

✏️Ingredients
1 lb or (~4-5 medium-sized parsnips)
1 large carrot
1 large leek
1 celery stalk
1/2 cup white wine
3 cloves of garlic, peeled
5 sprigs of thyme
3 sprigs of rosemary (optional)
2 bay leaves
4-5 cups chicken stock
1/4 teaspoon pepper
1/3 cup heavy cream
Salt to taste

✏️ Instructions
1. Preheat the oven to 400F.
2. Wash, peel, and chop the parsnips and carrot into 1-inch pieces. Cut the leeks in half lengthwise and wash well between the layers (sediment likes to hide there); but be careful not to peel them apart, you want the halves to be whole when you put them on the baking sheet. Last, chop the celery into 1-inch pieces as well.
3. Place your prepared veggies (parsnips, carrot, leeks, celery, and garlic cloves) onto a baking sheet with sprigs of thyme, rosemary, and bay leaves. Salt generously and drizzle on 3-4 tablespoons of olive oil before tossing to coat.
4. Place the mixture into the oven and roast for 35-40 minutes or until you see brown edges.
5. At this point, you can add the roasted veggies (minus the herbs), 4 cups of chicken stock, 1/2 cup of white wine, and 1/4 teaspoon of pepper in the blender and blend until smooth.
6. Next, place a large pot over medium-low heat and add in the pureed veggies. Let this simmer on medium-low for about 10 minutes to cook out the alcohol in the wine.
7. Then add in the heavy cream and cook for another 15 minutes on medium-low, 30 minutes if you aren't in a rush.
8. Salt to taste and enjoy!

⭐️ A true Southern Classic--Salmon Patties with Homemade Tartar Sauce ⭐️

Don't knock it until you try it! If you've never had salmon cakes before, maybe it's time to give them a try. They're super simple to make and are actually really delicious!

My mom used to make these for me for what seemed like once a week growing up--and I never got tired of them. Southern food tends to have a bad rep for being too simple or bland, but with the right balance of flavors, anything can be made into a delicious meal--salmon patties included. For this recipe, I used sauteed onion, pepper, garlic, and some lemon juice to brighten the flavors a bit. Serve with a side of homemade tartar sauce, and that's a perfect weeknight meal!

1 14.75oz can of Salmon (I use Double "Q")
1/4 cup minced red bell pepper
1/4 cup minced onion
1 garlic clove, minced
10 Ritz crackers
1 tablespoon mayonnaise

1/8 teaspoon pepper

Creamy, buttery, and smooth. Super easy to make and goes well with almost anything.

In this recipe, I used chicken base, garlic, and sage-infused butter to amp up the flavor. Heavy cream is another way to enhance potatoes as it adds a richer feel than milk (use creme fraiche if you want to get fancy!).

I may be a little partial as we had mashed potatoes almost every night growing up--but you can't deny the deliciousness of a well-cooked pot of mashed potatoes!

The perfect way to use up some that delightful summer pesto! This recipe is super easy and takes less than 20 minutes to prepare--given you have some pesto on hand. One of my favorite side dishes for sandwiches and wraps. Also goes well with grilled chicken and roasts.

I'm a big fan of dishes that can be reheated without losing quality, and veggies with pesto hit the mark every time! My boyfriend will even eat it cold, so if you're a meal prepper, this might be a good option for you.

- 1/2 lb green beans, or any kind of fresh bean

🌿 It's time to make pesto! 🌿
Now is the perfect time to visit your local farmers market for basil--the plants have been growing all season and farmers are ready to sell in bulk. Every year at the end of summer I make a big batch of pesto, freeze it in ice cube trays, bag it, and enjoy it all winter.

It's great for nights when you want something quick and effortless, but don't want to sacrifice on flavor. Just toss a few tablespoons or pesto cubes into a hot pot of pasta and you've got a delicious weeknight meal. Add it to white beans, sandwiches, wraps, salads, roasted veggies, grain bowls, and more. Super easy to make with a blender or food processor and so rewarding in the winter when you're desperate for a taste of summer!

This recipe is a conglomeration of tips and recipes I've accumulated over the years in efforts to find the most balanced, smooth textured pesto possible. In my blog post I go through different methods of making the pesto (mortar & pestle, blender, food processor) to find which one achieves the best pesto, and which one is the best for time.

✏️ Ingredients
- 4 packed cups of basil (pack them into the cup just enough that there isn't a lot of air space)
- 1/4 cup toasted pine nuts
- 2 small cloves of garlic, or 1 large clove roughly chopped
- 1/4 cup of grated parmesan cheese
- 1/4 cup of grated pecorino cheese *substitute with parmesan if you prefer
- 1/2 cup of olive oil
- Salt to taste

✏️ Instructions:
1. First put all ingredients except for the olive oil into the blender.

2. Start pulsing and begin drizzling in the olive oil until fully incorporated.

3. If you are looking for a smoother texture, simply blend until it meets your desired consistency.

4. Season with salt and enjoy on a beautiful bowl of pasta!

Caprese salad is on of those appetizers you can eat any time of the day, so why not put it into a wrap? This makes it an easy option for meal prep or a quick and healthy weeknight dinner. If you're meal-prepping, just be sure to keep the vinaigrette and other ingredients separate from the wrap and assemble when you're ready to eat. This way, the bread won't be soggy by the time you're ready to eat.

I love marinating proteins for sandwiches and wraps. This time we used Balsamic vinegar and garlic. Top this with roasted tomatoes, melted mozzarella, basil pesto (or leaves), and arugula, and you've got a meal worth devouring!

I've listed a bunch of tips on the recipe page for ways you can "kick it up a notch". Since I normally make this for dinner, there's usually time roasting the tomatoes, melting the mozzarella, or using pesto instead of leaves. Feel free to make it yours based on the time and ingredients you have!

🥗 Balsamic Vinaigrette -- Balanced, tangy, and delicious!

Balsamic vinaigrette is one of my go-tos not just for dressing a lofty salad, but for marinades, sandwiches, wraps, roasted veggies..the list goes on. It's a super versatile vinaigrette and takes less than 5 minutes to prepare.

The Jar Hack: Vinaigrettes are emulsions (a homogeneous hydrophobic-hydrophilic mixture) that need slow incorporation by whisk. Luckily, there's a quick hack! Just place all the ingredients in a jar or container and shake until emulsified.

✏️ Ingredients
4 tablespoons olive oil
3 tablespoons Balsamic vinegar
2 teaspoons Dijon mustard
2 teaspoons honey
1 clove of garlic minced OR 1/4 teaspoon garlic powder
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon marjoram *optional
1/8 teaspoon chili flakes *optional
Salt and pepper to taste (at least 1/4 teaspoon salt)

✏️ Instructions
Place everything except for the vinegar into a bowl and slowly whisk in the olive oil to create an emulsion. **If you a have a jar, you can simply add all the ingredients and shake to emulsify.

If you're a fan of crab dip, you'll love these souped up Jalapeño Poppers! Creamy, crabby, and seasoned with classic Old Bay. So good and incredibly easy to make.

✏️ Ingredients:
8-10 jalapeño peppers, cut in half lengthwise and seeds removed
1 block of cream cheese
1/3 cup crab (I used Phillip's Premium Crab Lump)
2 tablespoons chopped chives
1 teaspoon Old Bay seasoning, more for garnishing
1/2 teaspoon lemon juice
1/8 teaspoon garlic powder
Salt to taste

✏️ Instructions:
Preheat your oven or air frier to 400°F. (If you use an air frier, they may cook faster so be sure to check at 12 minutes or so).

Start by prepping the jalapeños. Rinse, dry and slice them in half lengthwise. Scrape out the seeds and set aside. (Note: If you don't like a lot of heat, be sure to remove all the seeds. The easiest way to do this is to rinse them once more and let them dry completely on a towel.)

Make the filling by combining the cream cheese, crab, 1 tablespoon of chives, 1 teaspoon of Old Bay, lemon juice, garlic powder, and salt in a bowl and mixing until thoroughly combined.

Fill the pepper halves with at least 1 tablespoon of filling each and lay on a baking sheet.

Place in the oven for 15-20 minutes until the cheese is melted and peppers are soft. Let sit for at least 5 minutes to cool. Garnish with some extra Old Bay and chives and enjoy!

The first day of fall is September 22! It's hard to see summer go, but there's lots to look forward to for fall, including soup season! This Barley Mushroom Soup with Sausage, Peppers, and Spinach is the perfect way to start the season. The tomato paste and paprika bring a bright red color while the mushrooms and sausage create a hearty, umami taste. The barley simmers in the soup for about 45 minutes until it softens and soaks up all that flavor 🍲

Note: If you are vegan or vegetarian, you can simply omit the sausage or use a spiced protein of your choice. Also sub in vegetable stock for the chicken stock.

- 1/2 lb sausage
- 2 tablespoons breadcrumbs
- 2 tablespoons milk

- A dash of smoked paprika
- 6 cups of chicken broth
- 2 large handfuls of spinach, or more if you like

Chicken Capricciosa - Hands down one of my favorite weekly meals 😛

This dish is so fresh and simple. A crispy chicken cutlet served on a bed of fresh greens topped with a tomato, mozzarella, red onion, and basil salad. Drizzle with a little Balsamic vinegar or glaze, and you have the PERFECT weeknight dinner!

Feel free to substitute the chicken with a protein of your choosing. I would avoid using beef though, the flavors mix much better with lighter proteins. Lion's Mane mushroom "cutlets" would be incredible--that's next on my list of variations to try!

For greens, arugula is phenomenal. We normally use that and/or a combination of spinach. When I took the pic for this dish, we happened to have kale and Lamb's Quarter.
