Roasted Parsnip Soup 🥣 Creamy, smooth, and ful Roasted Parsnip Soup 🥣Creamy, smooth, and full of root veggie flavor. Soups are always better if you take the time to roast the veggies, so this recipe calls for roasting the parsnips, carrot, leek, and garlic before puréing. It’s a quick, easy step that deepens the flavor and brings out the natural sweetness of the veggies, especially the carrot.If you happen to have bread on hand, some homemade croutons make a great addition!✏️Ingredients1 lb or (~4-5 medium-sized parsnips)1 large carrot1 large leek1 celery stalk1/2 cup white wine3 cloves of garlic, peeled5 sprigs of thyme3 sprigs of rosemary (optional)2 bay leaves4-5 cups chicken stock1/4 teaspoon pepper1/3 cup heavy creamSalt to taste✏️ Instructions1. Preheat the oven to 400F.2. Wash, peel, and chop the parsnips and carrot into 1-inch pieces. Cut the leeks in half lengthwise and wash well between the layers (sediment likes to hide there); but be careful not to peel them apart, you want the halves to be whole when you put them on the baking sheet. Last, chop the celery into 1-inch pieces as well.3. Place your prepared veggies (parsnips, carrot, leeks, celery, and garlic cloves) onto a baking sheet with sprigs of thyme, rosemary, and bay leaves. Salt generously and drizzle on 3-4 tablespoons of olive oil before tossing to coat.4. Place the mixture into the oven and roast for 35-40 minutes or until you see brown edges.5. At this point, you can add the roasted veggies (minus the herbs), 4 cups of chicken stock, 1/2 cup of white wine, and 1/4 teaspoon of pepper in the blender and blend until smooth.6. Next, place a large pot over medium-low heat and add in the pureed veggies. Let this simmer on medium-low for about 10 minutes to cook out the alcohol in the wine.7. Then add in the heavy cream and cook for another 15 minutes on medium-low, 30 minutes if you aren't in a rush.8. Every year at the end of summer I make a big batch of pesto, freeze it in ice cube trays, bag it, and enjoy it all winter. It's great for nights when you want something quick and effortless, but don't want to sacrifice on flavor. Just toss a few tablespoons or pesto cubes into a hot pot of pasta and you've got a delicious weeknight meal. Add it to white beans, sandwiches, wraps, salads, roasted veggies, grain bowls, and more. Super easy to make with a blender or food processor and so rewarding in the winter when you're desperate for a taste of summer!This recipe is a conglomeration of tips and recipes I've accumulated over the years in efforts to find the most balanced, smooth textured pesto possible. In my blog post I go through different methods of making the pesto (mortar & pestle, blender, food processor) to find which one achieves the best pesto, and which one is the best for time. ⭐️ Recipe link in the bio & story✏️ Ingredients- 4 packed cups of basil (pack them into the cup just enough that there isn't a lot of air space)- 1/4 cup toasted pine nuts- 2 small cloves of garlic, or 1 large clove roughly chopped- 1/4 cup of grated parmesan cheese- 1/4 cup of grated pecorino cheese *substitute with parmesan if you prefer- 1/2 cup of olive oil- Salt to taste✏️ Instructions:1. It's a super versatile vinaigrette and takes less than 5 minutes to prepare. The Jar Hack: Vinaigrettes are emulsions (a homogeneous hydrophobic-hydrophilic mixture) that need slow incorporation by whisk. Luckily, there's a quick hack! So good and incredibly easy to make. ⭐️ Recipe link in the bio✏️ Ingredients:8-10 jalapeño peppers, cut in half lengthwise and seeds removed1 block of cream cheese1/3 cup crab (I used Phillip's Premium Crab Lump)2 tablespoons chopped chives1 teaspoon Old Bay seasoning, more for garnishing1/2 teaspoon lemon juice1/8 teaspoon garlic powderSalt to taste✏️ Instructions:Preheat your oven or air frier to 400°F. (If you use an air frier, they may cook faster so be sure to check at 12 minutes or so).Start by prepping the jalapeños. Rinse, dry and slice them in half lengthwise. Scrape out the seeds and set aside. (Note: If you don't like a lot of heat, be sure to remove all the seeds. The easiest way to do this is to rinse them once more and let them dry completely on a towel.)Make the filling by combining the cream cheese, crab, 1 tablespoon of chives, 1 teaspoon of Old Bay, lemon juice, garlic powder, and salt in a bowl and mixing until thoroughly combined. It's hard to see summer go, but there's lots to look forward to for fall, including soup season! This Barley Mushroom Soup with Sausage, Peppers, and Spinach is the perfect way to start the season. The tomato paste and paprika bring a bright red color while the mushrooms and sausage create a hearty, umami taste. The barley simmers in the soup for about 45 minutes until it softens and soaks up all that flavor 🍲Note: If you are vegan or vegetarian, you can simply omit the sausage or use a spiced protein of your choice. Chicken Capricciosa - Hands down one of my favorit Chicken Capricciosa - Hands down one of my favorite weekly meals 😛This dish is so fresh and simple. A crispy chicken cutlet served on a bed of fresh greens topped with a tomato, mozzarella, red onion, and basil salad. Drizzle with a little Balsamic vinegar or glaze, and you have the PERFECT weeknight dinner! Feel free to substitute the chicken with a protein of your choosing. I would avoid using beef though, the flavors mix much better with lighter proteins. Lion's Mane mushroom "cutlets" would be incredible--that's next on my list of variations to try! For greens, arugula is phenomenal. We normally use that and/or a combination of spinach.
